viscosity from left to right:0 3 10 20 200the pouring surface has default values for all particle interaction settings. this means friction coefficient of 0.001.

I don't know anything about viscosity and stuff like that, but from reading those annotations, I'm assuming the less viscosity the more watery the liquid will look, and the more viscosity the more thick it will be?
