It is not necessary to cook fried rice using a lot of oil. As long as the wok is preheated well and the stirring is well, it can be as delicious as that in any Chinese restaurant.

  • Fry anchovies till crispy. They are to be sprinkled on the rice when it is done. :)

    The types of anchovies used are dried ones.
