If you think that cooking fish is complicated, this recipe will make you change your mind: we'll be cooking the crispy salmon together! First of all, combine the ingredients for the breading mixture: take the bread... break into pieces and place in a food processor... you'd better use a loaf of bread, either Italian or French, since it yields more fresh bread crumbs; add the herbs, the parsley... the dill... the thyme... and the rosemary... if you want you can replace one of these herbs with sage or basil. Grate the lemon zest... add salt... pepper... and finally the oil. Now blend everything together. Done, take the salmon out of the fridge... a baking sheet, lined with baking paper... then... pat the salmon dry and place on the baking sheet.
Now coat the salmon with the breading mixture... both the top and the sides... patting to adhere.
That's it, the salmon fillets are breaded, now bake at 350°F (180°C) for 20-25 minutes; during the last 5 minutes, you can put it under the grill to crisp up the top.
Our crispy salmon is ready, you can serve it with basmati rice to turn it into a great meal... good, easy and quick!
We used:
For 4 fillets:
• 4 fresh salmon fillets
• 4 bread slices
• parsley
• thyme
• dill • rosemary
• ½ lemon (zest)
• white pepper
• salt
• extra virgin olive oil

  • I am going to try this recipe on the weekend. It looks so very quick and easy. Salmon with plain rice is a favorite of mine.

  • Gee's and with me having to eat better do to blood sugar, this one looks like a good one for me. Besides I like to catch my own salmon. I think this would work well for Fresh Copper River Reds.
