I'm interested in cantonese because a member from a Chinese boyband is Cantonese, but I heard that only in Hong Kong people write in traditional, the rest of the province uses simplified.

That's true, but the probably the vast majority of Cantonese speakers live in mainland China, so it's OK to use simplified characters to write Cantonese.
