As residents of the Archstone Pasadena in Pasadena, California, we made this cooking video to enter in the Taste Of Archstone competition.

The vegetables in this recipe are local organic vegetables from our neighborhood farmers market and our local farm delivery service (http://www.farmfreshtoyou.com). The herbs are grown right on our patio.


The Recipe

Ratatouille

Total Time: 90 minutes
Prep Time: 30 min
Cook Time: 60 min

Ingredients:
1 medium Eggplant
4 large Tomatoes
3 medium Summer Squash / Zucchini
3 medium Bell Peppers
3 large Carrots
2 large Onions
8 cloves of Garlic
1/4 cup Olive oil
1 small can of Tomato Paste
Basil (10 to 20 leaves)
Thyme (1 to 3 sprigs)
Rosemary (1 to 3 sprigs)
Sage (1 sprig with 6 to 8 leaves)
Salt
Pepper

Description:
Mince the garlic. Finely chop the basil. Tie the thyme, rosemary, and sage into a bundle. Chop the remaining vegetable into large 1 to 2 inch pieces.

Add the olive oil, onions, and a pinch of salt to a large (6 or 8 quart) pot. Sweat the onions in the olive oil until they become translucent. Stir in the minced garlic and heat it until it becomes fragrant, about 30 seconds. Add the remaining vegetables and stir in the can of tomato paste. Add a liberal dose of salt and dash of pepper.

Cover and simmer for 1-hour on the stove top, stirring occasionally. Alternatively, If your pot is oven safe, you can place in a 350 degreee oven for 1 hour. Serve hot with a garnish of fresh basil. This dish can be served plain, over rice, or with a side of fresh crusty bread.

  • Somehow in nature documentaries, you always end up rooting for the male who tries to impress his lady love, whether it's a monkey throwing poo around or a bird doing an elaborate dance.
