I tried this method. It was VERY easy and turned out absolutely perfect! It reminded me of the prime rib at The House of Prime Rib in San Francisco. Best prime rib I've ever cooked. I live 800 miles from San Francisco, so now I can have wonderful prime rib in my own home!!!

Would'nt a 12 lb rib roast overcook if you roast it at 500F for an hour?
