@mrkrabz1991 yes, that is much easier, and quite possible more healthy, but this version uses the hot oil to its advantage, it crisps the outside of the cloves, as well as allows each segment to be completely open and ready to push the cloves out.

there is a much easier way to do it, put in foil, pour over olive oil, wrap up and put in oven for 30 to 45 minutes.

@CoachU2Health Once the bulbs are roasted, squeeze out the cloves as in the video and then mash into a paste.

what if when slicing off the 1/4 not every bulb is exposed, should I try and expose the bulbs?

@heidishoshana No that is not necessary. As long as the majority of the cloves are showing. Cutting off more than 1/4 of the bulb will reduce by too much the amount of garlic being roasted. Good luck!

Looks yummy! Can it be stored anywhere for later consumption if I wanted to make a bunch all at once?

@reed218 It should keep in the fridge for about a week. If you want to store it for longer than that. We would suggest removing the cooked cloves form the bulb and pack them in oil in an airtight container and store in the fridge. You may also want to toy with freezing them. If freezing works, please let us know and we will add that to the recipe. Thanks for your comment.
