If look at the epilogue of Spyro 2: Ripto's Rage, Elora is indeed Spyro's love interest. It says that he "missed his chance with Elora," and it shows them in that tunnel of love thing in Dragon Shores.

I belive they took her out for the same reason they took out Bianca ''Not the same species'' I say Bull they should have kept them in.
