湘菜即湖南菜,是中国八大菜系之一。湘菜的特点是注重刀工、调味,尤以酸辣菜和腊制品著称,烹饪技法擅长煨、蒸、煎、炖、溜、炒等。湘菜又可分为湘江流域、洞庭湖区和湘西­山区三个地方流派。湘菜的代表菜肴有剁椒鱼头、东安仔鸡、十景湘莲、干锅鸡、腊味合蒸、黄鸭叫、红烧肉、豆豉辣椒炒肉、怀化鸭、魚生湯、富貴火腿、左宗棠雞、生菜蝦鬆、酥­烤素方等。湘菜小吃有长沙臭豆腐、刮凉粉、长沙米粉、常德(津市)牛肉米粉、口味虾、浏阳火培鱼等。
