This is a good substitute for cheddar cheese or cheese sauces. I like to use it in vegetable soup, nachos, taco salads, sandwiches and many other things. For the soup just stir in a couple of large spoonfuls into the cooked soup before serving it. My brother-in-law (a staunch meat and dairy guy) tasted it yesterday and loved it.   • Just made this today. Tasty stuff! One problem I ran into was reheating it. I tried the microwave, and it got lumpy real fast. I didn't want to test it any other way without asking. Is there any good method you use for reheating to keep it smooth?

  • @livingtoworship It depends on what you are doing with it. If you are just wanting to re-heat it as it is I would suggest a double boiler on the stovetop. I suspect that the microwave changed its chemistry---thus making it lumpy. I don't use a microwave and have never had that problem.

  • @tattitiger I used to use them and often had a sore throat because of it and didn't understand what was causing the problem until my uncle Milton Crane MD told me about it.

  • @NewEarthWellness Thanks...I didnt know that about cashews...I'll get the pine nuts next time...this recipe is so yummy, it will be worth it :)

  • @tattitiger You are welcome. :) Fresh red bell peppers can be used too. One word of caution about cashews---they are a relative of poison oak and can cause an allergic reaction. It is more likely to happen when they are used in a large quantity and/or for a long time. They will cause a rash and sometimes a sore throat. Pine nuts are expensive here too but probably not as much as where you are. :)

  • Hi there. I live in UK and had a go at making this. Pine nuts were too expensive, so I used cashews. Couldn't get pimentos anywhere (but I do live in the sticks) so I used sun-dried tomatoes. Just wanted you to know that I love it...fantastic...thanks so much for the recipe :)
