Maangchi is making korean style ginseng chicken soup called "samgyetang."

Ingredients:
Small chicken (Cornish hen), 1/4 cup of sweet rice, a dozen cloves of garlic, green onions, a fewjujubes, and 1 or 2 small ginseng roots.

Directions:
1. Wash and rinse your chicken in cold running water.
2. Soak 1/4 cup of sweet rice for 1 hour.
3. Stuff the chicken with the sweet rice, a ginseng root, a few jujubes, and 3-4 cloves of garlic. Place it in a pot.
4. Pour water into the pot and boil it over high heat for 20 minutes. When it starts boiling, skim off any foam and fat that rises to the surface Then pour in more water and boil it over medium heat for 40 minutes.
5. When it cooks properly, the chicken will be easily pulled apart by chopsticks.
6. Serve it with salt and pepper and kimchi or kaktugi.

  • I so love this dish and I make it all the time during the winter time. When flu season and everyone is getting sick. I never do. I believe that ginseng does boost the immune system into power drive and thins the blood for better circulation of oxygen and vitamins and minerals. I love this dish one of my favorite to make for family.

  • @GracePrincess81 Earthenware bowl called ttukbaegi in Korean. You can get it at a Korean grocery store. Check out the photo on my website if you want. (Kitchenware section)

  • @Maangchi I looked up Cornish hen on Wikipedia and it is indeed a type of smaller chicken (weighing no more than 2 pounds maximum) :)

  • @9HereticPrincess9 yes, it's much smaller than usual chicken. 

  • @Maangchi Cornish hens and chickens aren't the same thing correct? I know that Cornish hens are smaller.

  • the recipe is good! and i've watched many variety shows and they seem to always put a very spiky stem/branch in the soup to boil too...do you happen to know what that is?
