"Staying Hungry": Jeremy Critchfield, executive chef at Nemacolin Woodlands and a 1993 graduate of the IUP Academy of Culinary Arts, talks about what its like to direct twenty-three kitchens spread over 3,000 acres. He discusses his leadership role in managing roughly five hundred employees who work in the resort's numerous restaurants and taverns, and he credits the Academy of Culinary Arts with helping him land the dream job that has become his passion.
