what good for frying chicken? veggetable oil or corn oil? cant afford canola/olive and those blend-mix olive is jus mix with cheap oil. if i get canola it must be pure.

Basically you want your internl temp of the thickest pieces to be 170° F. If your pieces are getting too dark before you reach those temps, then lower the temp of your oil.
heast your oil to 350° F then add your chicken, then lower heat of your skillet so oil stays at approx 300° F. Once your chicken is nicely browned, the internal temp should be in the ball park of 170.

Expert village sucks. 10 video parts for a simple recipe. It's so unnecessary. And so confusing because you don't know the order.
