Laotian Chicken (Kai Lao)

This is my tribute to Kai

Ingredients
1 chicken 750 grams or 3 pounds
12 ounce can of coconut mile (414 ml)
12 ounce can of coconut cream (414 ml)
3 cloves garlic
2 medium onions
1 chili or jalapeno
1 tablespoon oil
8 ounces ground pork mince (250 grams)
1/2 tesspoon salt
1 teaspoon salt
2 Tablespoons chopped cilantro or coriander leaf
1/2 cup uncooked rice
1 or 2 Tablespoons fish sauce

I only added one tablespoon fish sauce... wish that I had added more.

ive never seen this lao dish before and im sure ive tried every lao dish. ive never seen chicken cooked that way, it looks good though.

@ThaEazyLife211 Yes, I was referring to Laotians. You haven't eaten with every Laotian family in Laos. Not everyone eats the same dishes because there are local dishes that are only available in certain regions of Laos. It seems that there's more of Laos that you haven't discovered. You should make more friends in Laos and hopefully one of them will make that Laotian chicken dish for you. It's really delicious. You should also try Laotian yellow rice.
