Phase transformation (20x magnification, 4x speed) for isotropic liquid to nematic liquid crystal (on grooved surface). The elongated liquid crystal molecules tend to orientate along the scratches as does nucleation of the liquid crystalline phase, with the liquid crystal sweeping in from the side rather than appearing at random points.
