Well, by using Google Voice (http://www.google.com/voice) you can. Sign up for a free Google Voice account and make it a speed dial on your phone. Seconds after you leave yourself a message, an email comes in with your message transcribed by Google Voice.
Even when the transcription isn't perfect, a recording of your voicemail is right below the transcript, and Google Voice will play back the voicemail as it lights up the words in the transcript above.
