Make Your Brine
One Gallon of water and 1/4 to 1/2 Salt
Slice Zucchini and Onions
Slice Jalapenos
Add a Grape Leaf or Horseradish leaf
to the bottom of Jar
Add Spices and Sliced Vegetables
Fill Brine to top
Add a barrier at top if you do not
have a grape leaf place a plastic
baggie on top follwed by something
to weigh it down.
Let sit in a cool dry place 5 days

Remember to Sterilize all areas you are working with and Jar.

  • No vinegar in the brine? That's what a simple brine contains, it's also what makes pickles sour

  • LOVE zucchini!  Thanks for sharing a new way to use them. :) I like slicing them up and frying (or on the grill) them in a little butter, lemon juice, pepper and salt. Great quick side dish! Or in a potato pack on the barbeque...oh now you've made me hungry. Never thought to can them; thanks for sharing. :)
