I don't think Coby will become an admiral within the span of the series, I kind of see it as an ending thing. Though, I think he'll probably end up as an average haki using fighter and become the strongest person in the military without the use of a devil fruit. At this point in the series it seems too late for Coby to gain a fruit and learn everything about it.
..I just can't wait for the actual fight between Luffy and Coby.

Actually it will be so easy that it will get painful, Luffy might not even need to use his hands. Coby can use one type of haki a little, Luffy has mastered all three types of haki. I really don't see their fight as a challenge
