4 cups or 2 bags of frozen artichoke hearts (quartered if whole hearts & rinsed)
1 lb ground beef (or ground turkey)*
1 medium to large yellow onion
4 tbsp or ¼ cup olive oil
1 can diced tomatoes or 1 cup fresh diced tomatoes
1 small can tomato paste
4 cups water
1 heaping tblsp of cream cheese or lebni (Lebanese condensed yogurt) Optional
1 tsp salt (to taste)
½ tsp pepper
1 tbsp paprika
¼ tsp nutmeg
¼ tsp allspice
¼ cup toasted pine nuts for garnish each plate (toast pine nuts in pan on low heat constantly stirring till golden brown)

* for vegetarian version leave out ground beef

In large pot over high heat sauté onions in olive oil till soft. While sautéing add salt, pepper, paprika, nutmeg & allspice. Then crumble in ground beef to the pot. Use cooking spoon to break up ground beef into small pieces. Saute for about 5 minutes till cooked through. Mix in tomato paste and diced tomatoes. Add artichoke hearts and waterstir and bring to a boil on high heat. Cover pot with lid, reduce heat to low and let simmer for about 45 minutes (make your rice now). Final step (saved the best for last), uncover pot and mix in the Philly until completely blended.

Spoon generous portion onto plate over or next to rice. Sprinkle with toasted pine nuts

Makes 4 to 6 entrees

Rice with Toasted Orzo

2 cups long grain white rice
¼ cup orzo (small pasta shaped like rice)
4 cups water (or chicken broth)
2 tbsp olive oil
1 tsp salt (to taste)
½ tsp pepper

In medium pot toast orzo in oil over medium heat constantly stirring till golden brown. Immediately add rice and stir coating rice grains with oil. Add water, salt and pepper. Increase heat to high bring to a boilthen reduce heat to low, cover with lid and let simmer for about 20-25 minutes. Use fork or chop stick to fluff up rice.
