In this video, Mahalo expert Judith Jones demonstrates how to make baked eggs with tomatoes.

What You'll Need
---------------------------------------------------------------------

2 large eggs* 2 tbsp half-and-half
* 4 tbsp parmesan cheese, grated
* 2 tbsp tomato sauce
* 1 tsp butter
* Salt and pepper to taste
* 2 large ramekins
* Large baking dish or tray

Preparation
---------------------------------------------------------------------

Preheat oven to 350°F (176°C).2. Sprinkle half of the grated parmesan cheese into the two ramekins so that the bottom of each ramekin in covered. Save the other half of the cheese for later.
3. Add one tablespoon of tomato sauce to each ramekin and spread to cover the cheese.
4. Crack one egg directly into each ramekin so that the
raw eggs sit on top of the cheese and tomato sauce.5. Add a pinch of salt and pepper to each ramekin to taste (optional).
6. Add one tablespoon of half-and-half to each ramekin.
7. Sprinkle the rest of the parmesan cheese on top of the eggs in each ramekin.

Cooking Process
---------------------------------------------------------------------

Place ramekins on baking dish or tray.2. Bake 12 to 15 minutes until white crust is formed on top of the eggs.
3. Remove from oven, let cool and serve.
