Enjoy this yummy and easy homemade from scratch banana pancakes recipe! You can use this recipe without the fruit, but we need to get more fruits in our daily diet.

INGREDIENTS
1 cup all-purpose flour (For a healthier option, substitute 1/4 or 1/3 cup with wheat flour. Then, you'll need 3/4 or 2/3 cup of all-purpose flour with the additional wheat flour to make one cup.)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg, beaten
1 cup milk
1 Tablespoon sugar
2 Tablespoons vegetable oil (or to cut the fat, use 2 Tablespoons unsweetened applesauce)
1 ripe banana, mashed (original recipe called for 2)

OPTIONAL
1 Tablespoon lemon juice
1/2 teaspoon vanilla
1/8 - 1/4 teaspoon cinnamon
Fresh strawberries

DIRECTIONS
Here is a substitution for buttermilk. Put 1 Tablespoon of lemon juice in a measuring cup and fill it with milk to the one-cup mark; stir and set aside while mixing the other ingredients. Combine the flour, baking powder, baking soda, salt, and cinnamon together in a medium mixing bowl. Sifting the dry ingredients is optional, but it helps to make your pancakes from scratch fluffier.

In another bowl, combine the beaten egg, mashed banana, oil or applesauce, 1 Tablespoon of sugar and vanilla. Stir in buttermilk substitution made earlier or one cup of milk. Make a well in the dry ingredients and add all of the wet ingredients to the dry ones. Stir until just combined because if you mix it until completely combined, the pancakes will turn out too tough. So the batter will be slightly lumpy.

Heat an oiled, non-stick frying pan or griddle over medium heat. (Starting with a hot pan or griddle will aid in fluffy pancakes too). For each pancake, use 1/4 cup amount of batter. Cook pancakes until they are bubbly and edges begin to brown and then flip. DO NOT FLATTEN PANCAKES WITH SPATULA/TURNER. Serve the hot, golden brown pancakes with my "QUICK PEANUT SAUCE" recipe and the fresh strawberries just put these pancakes over the top. You have to try them!

  • Just a tip. Don't use a Teflon pan if you can avoid it. Use a griddle or cast iron pan instead. As you can see by the browning of your pancakes, it is not even from middle to edge. This means that the heat was not distributed evenly. Also, It looks like your heat was to high by the very dark brown, almost black around the edges as well. always check your heat level before cooking.
