Cinnamon Oatmeal Raisin Pancakes

Pancakes with a twist of oatmeal, cinnamon and raisins. These are fantastic!

Active Time: 10 min
Total Time: 30 min
Serves: 4

Step 1: Making the Batter

* 2 whole eggs
* 2 tbsp. brown sugar (or maple syrup)
* 2 tsp. vanilla
* 3 tbsp. canola oil
* 1 1/2 cups rolled oats
* 1/3 cup raisins
* 2 cups low fat buttermilk (or plain yogurt)
* 3/4 cup flour
* 1/2 tsp. baking soda
* 2 pinches nutmeg
* 1/2 tsp. baking powder
* 2 pinches cinnamon
* 1/2 tsp. salt

Whisk together eggs, brown sugar, vanilla and oil. Add the oatmeal, raisins, and milk. Mix and set aside. In a separate bowl mix together flour, baking soda, nutmeg, baking powder, cinnamon and salt. Mix wet ingredients into the dry. Stir until the dry ingredients are just incorporated, do not over mix.

Step 2: Cooking the Pancakes

* 1 tbsp. oil or butter

Turn heat to medium-high and lightly oil your griddle or frying pan. Ladle batter onto griddle keeping in mind that this batter is thicker than regular pancakes and will need to cook longer before flipping. The pancakes are ready to flip when the tops look less wet and shiny. Cook a couple minutes on the other side. Serve immediately with warm maple syrup.

  • This looks absolutely delicious, defenitely going to try it! Maybe it's a stupid question, but would it be possible to make these without the baking soda en the baking powder? I rarely use those en therefor I don't have a supply of them :/

  • @Ursanoctis These two ingredients are essential is you want fluffy pancakes that rise. This video does not go into detail as to why you don't want to over-mix the wet and dry ingredients but you're trying to not make gluten which will keep your pancakes from rising.

  • A very nice video! I also love pancakes and I want to fry them on a griddle which is similar to the one you use! Where can I purchase a griddle like that? Best regards from Germany!

  • So I watched a handful of videos for an oatmeal pancake recipe and this was the most easy to follow video by far; appealing and clean.

    I made these pancakes for breakfast this morning and they were fantastic! I halved the recipe because for a single breakfast. I added about 6 or 7 coarsely chopped walnuts and about a 1/4 cup of wheat germ. Added some extra protein and Omega 3's.

    I actually found that they were sweet enough as is and didn't want to ruin them with syrup. I sliced apples on top

  • Stay away from canola oil. "By nature, these rapeseed oils (canola), which have long been used to produce oils for industrial purposes, are... toxic to humans and other animals" Also most canola like soy and corn is genetically modified. So DON'T eat it... read every food label.. Many varieties of nuts or mixed nuts are cooked in canola eliminating all their health benefits. The government and industry know canola is toxic that's why it's cheap and plentiful... sick people are BIG business

    For extra treat I added choc chips when bubbles started to appear on the pancake and then i just let it cook thro one side. To know if its thoroughly cooked, make sure more bubbles appear and it looked non-shiny.

    The pancakes aren't sweet so this is where honey or syrup comes in handy =)
