Friends and Pupils of Chopin wrote that His improvisations were better than his published works.
Gabriela Montero gives us plenty of examples that this is true!

I just discovered her today. I definitely have to hear her next time she's in my part o' the states. Jaw dropping (hey, mine did!) technique, vast musicianship (i.e., she's not just a high-precision note playing machine), remarkable warmth and interaction with the audience—Wow, just Wow!

how many hands does she have? wait...actually, I think she has two hands but two brains.

We also have no recordings of Mozart. However, Beethoven and Mozart left excellent examples of what their improvisations were like, in the sets of variations and the sonatas which they published, and in their cadenzas. Beethoven won many tough improvisatory battles over such rivals as Johann Nepomuk Hummel and Joseph Woelfl. There is much more evidence of Beethoven's great improvisational skill in the written memoirs of his contemporaries and his musical rivals.
