Not a dirty trick. Strategy. The challengers need every advantage they can get. The Iron Chefs know the judges' tastes and are used to the 60 minute time crunch. They get the advantage of the secret ingredient, and an additional advantage of choosing an opponent. Then again, if you win, wouldn't you want to beat the BEST, the person who is MOST challenging? I would....

@screamingdean5 the challenger respects the flavor and aroma of the matsutake, and the iron chef dont, if u only see at the begining of the battle, when the iron chef washed the matsutakes. also the iron chef used flavors and aromas that maked the matsutake to lose aroma, and again, thats not repect, thats weird cuz in french cuisine the respect is primordia, YOU HAVE TO KNOW THAT THEY WERE SERVING MATSUTAKEs dishes.

I like Sakai, but the challenger had it in the bag from the get go. He really knows this mushroom and all his dishes brought out a different aspect of it. Keeping things simple and delivering great food is far more difficult than going through lots of complicated steps for the same purpose. In fact, the challenger beat Sakai on the sauces as well.
Michiba would have been a harder opponent for this ingredient, but I think the challenger would have given a hard run even then.

man that guy knows flavor, the way he said "i feel sorry for the mushroom." truly says that he respects the flavor of the mushroom itself! Amazing knowledge and judgement on this own part. Wow.

@GeorgeMonet the last lady is one of the experienced judges she's a regular, Sakai did a good job but I agree that he tried to mask the taste alot more with sauces that caused him to have dishes that tasted more like the sauces then the mushrooms which were the key ingredient. Hence why he lost to the challenger because the challenger really brought out the taste of the dish without the use of sauces
