Burgoo is a deliciously thick soup or stew made from cuts of beef and chickens along with cabbage, onions, carrotts, potatoes, noodles (or rice), tomatoes (or puree), and other ingredients. Burgoo is cooked overnight typically in 55 gallon kettles of overboiling water. First meet is cooked off the bone then vegetable are added one at a time with the tougher veggies like carrotts and bean going in first then cabbage and onions and tomatoes and spices near the end.

Burgoo is known to be made in West Central Illinois and parts of Kentucky. The soup was once more wide spread in popularity and has long been used for fundraising. It is commonly purchased by the gallon. Some Burgoos may consist of as many as 30 55 gallon kettles. Kettles are known to sell out within a couple of hours.
