Overview:

At Wheelbirks Farm there is a herd of 120 Jersey cattle from which milk, cream and ice-cream are produced. Marion takes a measured amount of milk from the morning milking and puts it through a pasteuriser at 85◦ Celsius. She carefully measures ingredients by weight or volume and mixes them together before pouring the ice cream into small tubs. During the process she uses a formula (or recipe) and measures temperature, weight and volume.
