I've been playing around with using my HDMI capture card to capture the video output from tablets. This is the result of testing it with an iPad 2. As you can see (or rather hear) in the video, capturing over HDMI records both video and audio. I used Camtasia Studio to capture the video, because the software picked the HDMI capture up as a protected HDCP stream, and as such wouldn't let it record straight from the software (hence, Camtasia Studio to simply capture the stream as it was previewed).

@karimn97 Confirmed that it does NOT work with the iPhone. Apple-imposed limitation, it appears.

@teddzertell123 Yup, I've used it to make a video of Angry Birds, and it grabs both the video and sound, in perfect quality.

@FriedChickenScatch I used an HDMI capture card made by AverMedia, and Camtasia Studio to record what was being show on the screen. I made a video showing how to do this from start to finish, but since stupid YouTube won't let me add a link to their own website in the comments, you'll have to add this to the end of the URL in your address bar (after youtube . com part):
