    When you cook a steak in a pan, the fat remains in the pan, sticking with the steak. You end up serving a steak with grease flavor. And while grease can be good in other floods, it detracts from steak.

    On a grill, the fat drips away from the steak, and you impart smoke into the meat which adds flavor.

    I'm sorry, but steak shouldn't be cooked in a pan. You need to grill steak, presumably over some wood chips to impart some smoke. Though I do agree about finishing with some butter.
