Use the Lamborghini Countach LP400 which you win from the Lamborghini Exclusive race in the professional series. Fully Tune it and make sure to add a wing as well.

Settings i used:
Set the aero to 20 for the wing
Set the max speed to 168 mph
Set the ride height for the front an reat at -11mm
12.5Kgf/mm for both front and rear.
Front Camber angle of -2.5
Rear camber angle of -1.5
Brake Bias - 8 Front and 6 Rear.

add the wing from the GT auto section (the place where you change the oil etc) just go to the aero part and add a rear wing. Then you need to add downforce in the tune settings before the race.
