Keep your leeks in the fridge. To clean your leek, slice it lengthways from the beginning of the light green bit down to the dark green end. Rinse under the tap with the dark green bit facing down. Fan it open, so the dirt runs out.
You can eat the dark green ends -- they just need cooking a little longer. They're also super in stock.
