brewing a vienna lager, all grain recipe.

One of the few remaining commercial examples of this style of beer is Dos Equis Amber, which my beer tries to emulate.

Getting the mash tun, hot liquor tun and the brewing waters measured, filtered and prepared.

  • Good stuff. I like your false bottom. Does it fit snug? Also, what is your efficiency generally?

  • Does not fit too snug, there is a bit of grain leakage around the outside edge, trying to figure out how to seal that up. Effeciency is 83% on average.

  • Ah cool. Designing something similar myself and was worried about it not being snug. 83% is great so it's not a worry any more!

  • Definitely work with whoever is going to fabricate it to get some sort of seal around the outside. Also, think about the grain bed and the suction it creates, originally I just used the stainless mesh, but it collapsed under suction and I had to reinforce it.

  • Don't you treat the water?

  • I did not used to as the rainwater is super soft, now I put minimal amounts of calcium sulphate, calcium chloride, gypsum etc in, mainly for yeast health.

  • The best filter you can use for the grain would be a fine mesh "reversed" funnel.

    Its kind of like a cone you'd place at the bottom of the barrel with a seal on the bottom. Allows for good drainage from a under drain, though if yours is on the side of the barrel you'd need ot be a bit more creative.

    I think it'd be your best bet at a funnel, it just depends on how tight that seal is. But your current one would work well enough with a good rubber, or maybe cloth seal at the edges.
