Cool Ranch Dorito(TM) Creme Brulee

Who knew it would actually work? This is the reaction of Dorito aficionado Ian and respected snack food skeptic Tracey to the finished product.

(Makes 4)

3 C whipping cream
5 tsp grated lime peel
3/4 sugar, with additional for top
7 large egg yolks
1 and 1/2 C crushed Cool Ranch Doritos

Preheat oven to 325 degrees. While that is heating up, combine cream and lime peel in a saucepan and bring to a simmer. While the cream mix is heating whisk together the egg yolks and sugar in a bowl until is has just started to thicken, then whisk in 1 cup of the crushed Doritos until the mix is thick. The cream mix should be starting to get hot; remove it from the heat and slowly whisk it into the Dorito mixture. After mixing, pour equal amounts of the mix into four ramekins. Place the ramekins in a metal baking dish and fill the metal dish with hot water up to halfway up the sides of the ramekins. Place in oven and bake for 55 minutes. Remove the custards from the water bath and chill them, uncovered for at least three hours to allow them to set.

After the custards have chilled, place them on a fire-safe surface. Sprinkle a layer of sugar over the custard in each ramekin. Use a cooking torch to heat the sugar until it just starts to liquefy, then add a thin layer of the remaining crushed Doritos on top of the sugar, pressing down very lightly, and then torch some more until the Doritos are browned. Allow to cool and then consume. If you do not have a torch, place the sugared custards under the broiler until the sugar starts to melt and brown, remove and add the Doritos, then replace under the broiler until the Doritos are browned. You will find that some of the Doritos have sunk to the bottom of the custard, this is normal. At least as normal as this can be.

  • OK, so I followed the link from the Kogi BBQ site to see this Ranch Brulee in action. But the really bizarre thing is that your voice sounds a whole lot like mine! I even called my husband over to listen and he said, "Is that you...?" even though he knew it wasn't but it is really similar. Very funny.

  • Oh that's funny....your husband probably wonders what you do when he's not around. "Hmmm...could she be making snack food desserts?"
