Part of my awakening journey is learning to cook nutritious meals. I really enjoy this dish and its so quick to make. Quicker than shoving something processed in the oven.

The original recipe came from my new Ayurveda Chef coach , Michelle Palmer. http://www.michellepalmer.net/

Michelle recently came over and helped me look through my cupboards and take out anything that was overly processed. Luckily there was only a few things. We then went shopping in local whole food store http://www.gaia.coop/

Yes it was more expensive because I needed to stock up on some new lentils etc (and organic often costs more) - but these dishes can last a few days so really it does work out more economical. Which is what I'm working towards.

My take on the original recipe is as follows.

Curried Rice

2 tsp of extra virgin olive oil (you can use sunflower or a few sprays of 1 cal extra virgin olive oil)

1 bag of quick cook white basmati rice (would have preferred cooking brown from scratch but I was all out)

1 small red onion (minced or finely chopped)

1 can of butter beans

1/2 red pepper chopped

Spices

1/2 tsp turmeric
1 tsp coriander
1 tsp black mustard seeds
1/2 cumin seeds

1/2 cup of water (sorry in the vid I said two and that's way too much) Just use the water to simmer off the meal.

Compliments:

I had my curried rice with hot salmon in mustard seeds (Marks & Spencer) and some chopped baby tomatoes. You don't need a lot of this meal to make you full and it can be put in the fridge for the next day.

The curry taste is very mild and suitable for children.
