that took along time. 10 minutes to take the wool off the face? do they eat the heads ? if not why do they skin the face. it must of them like half an hour to do the whole thing.

@615murray Well it's important to skin the face first of all because the head is a great place to mount the front of the body to the spit, so that by skinning it you don't have burning wool and a bunch of smelly stuff.

Other than that, some of the older people eat the eyes and the brain sometimes, I haven't really checked that out.

i work at a butcher shop and a faster way to skin the head is to step on the skin and to tug and cut where needed.. all in all we bleed skin and gut bout 8 or 9 an hour..
