Nice tutorial!! Very well spoken and a very good presenter of the material - easy to follow and understand. Unlike some people who make tutorials that are distracting (and annoying) because of how they explain things or attempt to explain. Some sound like they just woke up out of bed at 2am and decided to make a tutorial while still half asleep - trying to piece thoughts together. Looking forward to more from bugzilla2001. Nice work!!

Is it possible to use interface builder in conjunction with Unity?

No. I haven't heard of any exporter for IB to Unity. Unity has very simple commands for creating a GUI, though, so it's really not that necessary.
