Japanese chopsticks etiquette is probably the most strict among all the other Asian countries table manners. The breaking of disposable chopsticks is something you always do at the Japanese restaurant. And this video shows what the Japanese consider the most proper way of breaking chopsticks.
I don't always follow this manner. However knowing what the most proper way gives you an option to choose when you need to present yourself in certain way.
This is recommended when you go eat at an upscale Japanese restaurant as well as eating with the older generation of Japanese.

Each of them are created in different age to serve for different purposes. For example, Rikyu bashi was originally created for tea ceremony. Tensoge bashi is used for a special occasion, too. Genroku and Koban bashi is cheaper to make therefore being used for daily disposable use at regular restaurants.
