I'm writing an int'l cookbook of my own by creating recipes which celebrate numerous regions of various countries. Thanks for this version Ana, I agree that paella has a LOT of varieties (all delicious). Cooking is not a career for me, merely a passion (albeit an expensive one LOL).. but the friends & family I try the recipes on truly appreciate the effort (plus get free meals out of the deal). Sure wish I had someone as gorgeous as you in the kitchen with me!

@pantuky typical americanized bullshit from usa trying to teach how to cook spanish dishes but teach others exactly the false ways- buddies true paella is cooked over the fire to reach the true taste not on the stove- she should stay away from the stove and better concentrate on painting her face- or should concentrate on baking brownies and pancakes lol

@Mr19pedro78 Thank you for stopping by to post a comment. I am actually Spanish. Born and raised. I have eaten many paellas in my lifetime and yes paella can be cooked on an open fire in the countryside. But since this is not the reality for most people, any good chef will tell you that a delicious paella can remain true to its heritage even when cooked on the stove, or many of us would simply have to renounce to the pleasures of eating it.
