And yes, I realize I referred to them as cleavers when they're not really cleavers exactly. I'm not really sure WTH they're called. I just know they're really good knives.

Great advice. I've got a question for you -- these knives don't look like they can handle heavy tasks like breaking down a kabocha or butternut squash. What knife do you use for those types of tasks?

@musicforoxygen I use the larger of the two to break down squash like butternut, and it works just fine, but I make sure to start with the blade on the surface of the squash and first rock it back and forth to cut through the rind and then slowly work my way down with a rocking motion.
