Cajun Rub:
2 tablespoons paprika
2 teaspoons salt
2 teaspoons onion powder
2 teaspoons garlic powder
2 teaspoons cayenne
1 1/2 teaspoons ground white pepper
1/2 teaspoon ground black pepper
1 teaspoon dry thyme leaves
1 teaspoon oregano leaves

    May I suggest when you flip the steaks, you turn them on to a different part of the skillet. A part of the skillet you hadn't cooked the first side on will be hotter and give you a better sear on side two. Just a thought.

    I saw you had your grease vaporizer tents / burner sheilds (whatever they're called) wrapped in foil. @ 4:39

    Why didn't I think of that?!

    My first set rusted out, and it cost me $56 to replace them. Now the replacements are starting to rust out. I'm going to yank them out this weekend, sand the rust off of them, and wrap em in foil too.
