i made the circles naan but i bought the long rectangle one
. i fried the chicken, the main recipe is the salta.Saltah is one of the main dishes in San'a and is considered Yemen's national dish.
INGREDIENTS
1/4 cup vegetable oil
1 lb (450 g) meat
2 onions, chopped
4 Yukon Gold potatoes, peeled, diced into 1/2-inch cubes
2 tomatoes, finely chopped
1 tsp salt
1/2 tsp pepper
5 cups beef broth
2 large eggs, beaten
2 tbsp finely chopped cilantro leaves
2 tbsp each: zhug, hulbah
DIRECTIONS
Heat oil in 3-quart saucepan over medium. Add meat and onions. Cook, stirring often, 10 minutes. Add potatoes, tomatoes, salt, pepper and broth. Bring to boil on high heat. Cover. Reduce heat to medium-low. Simmer 1 hour or until meat and potatoes are well cooked, adding a little water if necessary. Stir in eggs and cilantro. Cook 2 minutes. Remove from heat. Stir in zhug and hulbah.
Making the Hulba:
1. Soak the fenugreek in cold water
fenugreek is better .
2. Drain the old water and add new cold
water
3. Blend the fenugreek with hand or with blender for 15 minutes then soak for 6 minutes
4. Repeat step until mixture is
white and creamy.....and put it top on the meat salta ,and eat .with nan maloog,
