Basically, this is like an electric heater or toaster oven. You set the thermostat for a certain temperature and it cycles on and off to maintain that temperature. When it's too cold, the heater/oven turns on, and when the desired temperature is reached, it turns off. Sous vide cooking needs very precise temperatures, which is why you need a digital controller and not just a dial. Cooking lasts many hours, and even days.
