Three-Michelin-Star chef Alain Passard from the award-winning restaurant L'Arpege in Paris, pairs up his culinary delights with the wines of Paul Jaboulet Aine. Passard describes his two schools of cuisine as "fire" and "flavour" in an unforgettable evening at the Crown Macau.

  • Just because there's not enough Asians in his restaurant does not necessarily make Asians inferior. Put it this way; If you were in France and you wanted to taste true Chinese food, you would prefer Chinese people who have been cultured in their art to prepare dishes, not native French people. In the same way, it makes sense to have a majority of "Western" influence in a authentic French restaurant. Both cultures have much to share. Both cultures are rich and can provide insight for all.

  • I saw Alain Passard compete in Japan on the Iron Chef show finale, he's 3-star Michelin. But what I see here is that his restaurant in Macao does not have enough Asians taking the lead roles... that has got to change. Some people living in Asia have this idiotic notion that westerners are better than them... that has to change also.
