STEAMED EGG SOUP
(Good idea to cook this with mapo tofu as this dish can share with some basic ingredients as mapo tofu)

A little bit of ground pork or chicken
Chinese mushrooms (dry, rehydrated using hot water for several minutes or room temperature water for several hours) Slice into small cubes
A few pieces of shrimp, sliced into small pieces
3 eggs
1.5 cup of chicken broth
1.5 cup of water

Garnish:
-green onion slices
-tong tsai
-some more ground pork/chicken and shrimp


1.Saute/Brown ground pork or ground chicken
2.Add mushroom. Cook everything until tender.
3.Put most of the cooked meat in the bowl that will be used for steaming. Set the rest aside to use as topping.
4.Scramble the eggs.
5.Add chicken broth and water.
6.Pour into bowl to be used for steaming.
7.Steam until egg has set.
8.Add remaining meat, green onions and tong tsai.

**To make chawanmushi, lessen liquid.
