The Witcher 2
Haven't played this game through yet, but what I've heard so far is absolutely fantastic. Will probably comment more on this when I've heard more.

Heroes of Might and Magic (series)
Insanely beautiful music here - especially HoMM IV has some amazing songs, as jerrik96 pointed out. ;)
Warhammer 40k: Space Marine
A bit like Civilization IV here, in that its music more or less made me buy the game. Tried the demo, fell in love with the soundtrack, bought the game. The fact that they used a live orchestra truly shows off.

Command & Conquer IV
I know many disliked this game - I found it quite good, but what really surprised me was its soundtrack. While it certainly doesn't feel C&C, it is absolutely fantastic in its own regard. Especially "The Prophet's Ascension" is one of the most beautiful pieces of video game compositions I have ever heard.

Crysis 2
Hollywood-ish and cinematic, in a good way. Since I love orchestral music this is an easy pick - also see the reasons below.
Crysis/Warhead
For more or less the same reasons as mentioned in the video above. ;)
Fallout 3
I've spent so many hours in Fallout 3, and whenever I think back at those hours I hear its soundtrack - absolutely wonderful. It captivates the setting of the game wonderfully, truly *feels* Fallout.

Deus Ex: Human Revolution
I do love DX1's soundtrack as well, but HR's is so.. unforgettable. It feels so much like part of the game world, strenghtens the immersion and enhances the atmosphere of the game in a way that is masterful in every regard. A true masterpiece.
Civilization IV
Baba Yetu, 'nuff said. In fact, I bought this game without having any idea what kind of game it was, just because I had heard its main theme. That's how awesome this music is. :D
