So if anyone uses sugar (sugarcane went around the world from india like tomatoes from latin america) or some black pepper does it become indian dish.

Also the fusion dishes like tandoori and others you mentioned the meat ones or say muslim influenced ones, but most vegetarian food is indegenous(without tomatoes and potatoes)and unique.

Olive oil has very diffrent flavour from anything used in indian cooking,
