Ingredients:

1can Ceci Beans
1 can of Tuna packed in Olive Oil
2-3 Scallions
1 clove Garlic
1 medium Carrot
The Zest and Juice of 1 Lemon
A few sprigs of Parsley
A little dried Thyme
A few Red Pepper Flakes
About 2 tbs Olive Oil
Salt and Pepper to taste

  • Lovely presentation! I love that first pic! It looks fantastic! It made me hungry right away! I didn't know what a Ceci bean was, lol I saw the pic and I said those are garbanzos! I love garbanzos! The dressing looks fantastic, tons of pepper flakes as I like! Beautiful dish, very delicious and simple!

  • @slolita1 I love Garbanzos too. This was probably the easiest thing I made all month but it was still a pretty good lunch.

  • Pimentos would be awesome. Not only would they be tasty, they would also add a burst of color and a good dose of Vitamin C to the dish. Thanks for the idea.
