you can clean them, fillet them, lay them out on foil with just lemon and butter (or margarine or a little oil to substitute)..a little black pepper (or not) patted on both sides..wrap in foil (make packets of each fish) and on the grill...till flaky...yum. It's how I cooked Sea Bass I caught. Works for nearly all fish. My sister still says it was the best meal she's ever had. (Baby red potatoes or rice and a salad on the side)....

Come on down to West Virginia, my parents still live in the house I grew up in, we could go in the backyard, cast a line in the Elk, get a fire going,catch some Elk River catfish - which taste sweeter than their non-Elk bretheren - put a pan of cornbread on the fire, just bring all wood-comb harps, mamma don't 'llow no plastic-comb playin' round here, lol. (That was a joke, bring whatever, I'm sure mama would make an exception).
