@lalatad yes...you never want to take the reaction that far...she was 1 second away from bitter burnt caramel....just stop a little before the desired color...the residual heat will continue the process...trial makes perfect

Haha ur caramel is shit it should not be as dark as urs and u need the brush around the pot with water the make a nice caramel haha

Hi Agatha,
You simply need enough water to dissolve the sugar and then boil it until it becomes golden brown. I would try using more sugar next time as its harder to make a small batch of caramel - try using a few cups of sugar.

I did not pour out any of the water. It mixes with the sugar to create the caramel (and most of it evaporates).

Hi tamajinn, Sorry you missed the lifting of the caramel decoration. That was our mistake and the camera wasn't on. You actually don't even need a spatula. When the pan is well oiled they simply slide off. (Feel free to use an off-set spatula if you feel more comfortable lifting it off). For the caramel over glass or metal bowl technique. Once you have your dome I simply invert it and place it on top of the dessert for a 3D version of the same garnish.

It is a dark rich caramel.
I thought 'd add how to clean the pot after you are done. Use up as much caramel as possible. Then fill the pot with water as close to the rim as you can without spilling it when it boils. Continue boiling the water for 5 minutes then pour out. Repeat this as many times as necessary until all the caramel is gone. If your utensil has caramel on it as well - simply add it to the pot !
