Tomato Sirloin Soup
2 TBS. Olive oil
2 cloves Garlic
2 carrots, peeled and sliced
2 celery stalks, sliced,
1 chopped onion, or Frozen chopped onion
1 cup spinach leaves
2 cans crushed or diced tomatoes (with basil)
1 cup chicken broth
1 (16oz.) can butter beans
1 pound of ground sirloin

1. Heat 1 TBS. of oil in a large sauce pan and add carrots, celery and chopped onion. Stir and put a lid on the pan. Cook until the veggies are softened.
2. Heat 1 TBS. of olive oil and garlic in a sauté pan. Add the ground sirloin. Break up the sirloin into small chucks, but not completely ground. Salt and pepper to taste. Brown and set aside.
3. Once the carrots, celery & onion are softened, add the canned tomatoes, chicken broth and butter beans. Cover and simmer for 15 min. Using a stick blender (or food processor, or blender), puree the soup.
4. Slice the spinach leaves and add them to the soup along with the cooked beef. Simmer for 5 more minutes and serve
Optional: If you're not watching carbs, or your family needs some, you can serve with French bread, Ciabatta, Saltine crackers, Hearty German brown bread. OR, you can add a small amount of tiny pasta such as stars or alphabets to the soup.

  • For richer flavor and less calories, I'd brown the meat in garlic and add the salt and pepper to it (maybe even a little soy sauce) . Basil in the soup would be good too. If you want to make it creamy, add one container or plain greek yogurt. SO many options. Thanks for the comment!

  • just an update. I made this again and I used frozen carrots and let everything cook in the crock pot. I used some sage sausage (is this ok?) and some Italian seasoning, anyway it was good on day one and my kids liked it better this time. Thanks again

  • Real great meal. Loved it. I like tomatoe soup and all the extras make it better for me.

  • Okay made this for dinner last night and it was pretty good. the next time I make it i will use stock and more seasoning. I have a feeling it might have fuller taste today. Thanks for the healthy and quick dinner idea.
