Professional players on MFO differentiate between Snaking, no-Snaking and Open records. For snaking, you have to use 100% acceleration; for no-snaking 100% max speed and for open you are allowed to use certain techniques such as checkpoint skipping, space flying, hyper speed side attacks that are not allowed in the former categories, and you can use any balance % setting you want.

FYI, "snaking" was apparently an intentional mechanic built into the game, or so Nintendo has stated.
